I’ll be honest, any recipe that contains mangoes has my attention. Also, anything that involves quinoa as a source of protein will end up on my dinner table. Props to my awesome husband who chopped the mango for me!
This is a fantastic summer dish! You could eat it as a main course or as a side salad.
2 cups cooked quinoa (at room temperature or cold)
2 diced mangoes
1 handful chopped cilantro
1 15-ounce can black beans
1 red bell pepper, chopped
6 green onions, thinly sliced
4 Tablespoons red wine vinegar
3 Tablespoons olive oil
1 Tablespoon fresh lime juice
In a small bowl, combine vinegar, oil and lime juice. Combine everything else in a big bowl. Drizzle liquid mixture over the salad, and toss until well combined. Chill for about an hour.
I confess, I got this recipe from the Biggest Loser, I did tweak it the tiniest but it’s not my original idea.
Side note: If you haven’t discovered quinoa, this is your big chance. It’s high protein, versatile and a cinch to make. A few weeks ago a friend asked on facebook if it’s “keen-wah” or “key-noah”. (I feel fairly convinced it’s “keen-wah”.) After this debate, I was looking for it at a new grocery store and was mocked by one employee, “I thought you said “King what” and was told by another employee he didn’t know what it is. Sigh. It can be tricky to find. Persevere and enjoy. And let me know if you ever figure out how to pronounce it!
