Lucknowi Omelets

Fried Eggs getting boring?! These culinary delights greeted me one morning in India, and I’ve never looked at eggs the same way since. I’m not sure why these are called Omelets, because they don’t fit my definition, but they’re delicious in any case.

-1/4 white onion
-2 T butter
-3 eggs
-1/4 t. cumin
-1/4 t. pepper
-1/4 t. chili
-splash of water

How To:
1. Heat a frying pan on medium heat. Chop the onions and add to the pan with butter. Fry for about 3 minutes, or until golden. Remove and set aside.
2. Add remaining butter to the pan. Break three eggs into the pan and add 2 T of water. Cover with a lid for 2 min on medium heat. Remove lid, break the yokes with a fork and sprinkle with spices and onions.
3. Cover again for 1-2 minutes or until cooked as desired.
4. Enjoy with toast!!!
